Baked Pasta

I call it baked spaghetti for the kids, but you can use any pasta noodles that you have on hand!

Ingredients:
1 pkg. pasta
2 Tbsp. olive oil
1/4 large sweet onion – finely chopped
2 large cloves garlic – minced
2 Tbsp. minced leek
1 28 oz. can crushed tomatoes with basil
basil & oregano to taste
2 cups shredded cheddar

In a large pot, boil 6 cups water. Boil the pasta according to package directions.

In a small saucepan, heat oil. add the onion, leek and garlic and saute until translucent. Add the crushed tomatoes, basil and oregano and stir together. simmer for 10 minutes.

In a 9″x12″ pan, spread the cooked pasta and sprinkle with 1/3 of the cheese. Pour the sauce over the noodles and cheese, and spread around to cover. Sprinkle with the remaining cheese.

Bake in a 325F oven for 15 minutes, or until the cheese in nicely melted.

Serve with bread – French, sourdough or garlic.

    I add Cream of Chicken soup, but I also saute my celery, onion and carrots in some butter and flour before adding to my soup, it works wonders! All the yummy flavor sweats out and you get a nice thickener to boot.
